Hi Mike!

DIETARY Cholesterol is very different from SERUM cholesterol.  Dietary cholesterol does not enter the bloodstream and become serum cholesterol -- it is digested.  For example, shrimp are a high dietary cholesterol food -- but eating shrimp will not raise your serum cholesterol.

(However, shrimp are unkosher 😀.)
